Ham Steak with a Balsamic Glaze, Garlic Mashed Potatoes and Roasted Parmesan Broccoli
Ham Steak with Balsamic Glaze:
Sauté ham steak until cooked through then drizzle on Balsamic Glaze.
Balsamic Blackberry Glaze... 2 cups of PC Blackberry Aged Balsamic Vinegar 1/2 cup brown sugar Pinch of salt
In a small saucepan, mix vinegar, sugar and salt over medium heat. Bring to a boil, then turn heat to low and simmer about 20 minutes. When glaze is syrupy, remove pan from heat and let cool.
Garlic Mashed Potatoes:
8 potatoes, peeled and quartered
1/2 cup milk
1/4 cup PC Roasted Garlic Avocado Oil
salt & pepper, to taste
Bring a large pot of water to boil. Add potatoes and boil until soft, (20 to 25 minutes). Drain and place in a large bowl.
Combine potatoes with milk, oil, salt, and pepper. Mix with an electric mixer or potato masher to desired consistency.
Roasted Parmesan Broccoli:
4lbs broccoli, cut into small florets
6 tbsp. PC Coastal Lemon Avocado Oil
1/3 cup freshly grated Parmesan cheese
salt & pepper, to taste
2 tbsp. fresh basil, chopped
Preheat the oven to 425 degrees F.
Place the broccoli florets in a single layer on a large cookie sheet. Drizzle with 5 tbsp. Avocado Oil and sprinkle with salt and pepper. Roast 20 to 25 minutes, until crisp and the tips florets are golden. Remove the broccoli from the oven and toss with 1 tbsp. Avocado Oil, Parmesan and basil.
